Four oz soft tofu, crumbled
Half large red bell pepper, chopped
Two or three cup chopped baby Portobello mushrooms
One cup chopped spinach
One Arnold Sandwich Thins 100% Whole Wheat
One oz part-skim mozzarella
Half tablespoon oregano
Heat oil in a cook pot, and then add tofu and vegetables. Cook for five to seven minutes, moving often. Serve on sandwich thin and top with cheese and oregano.
