The Winter Warmer Bean And Pasta Soup

Bean and Pasta Soup (4 servings)

Ingredients:

  • Baked beans: ½ cup
  • Cooked pasta: ½ cup
  • Butter: 2 tablespoon
  • Thinly sliced onion: 3/4th cup
  • Thinly sliced garlic: 1 tablespoon
  • Finely chopped tomatoes: 1 cup
  • Dried oregano: 1 teaspoon
  • Tomato puree: 3 tablespoon
  • Salt to taste
  • Corn flour mixed in 1/4th cup water: 1 tablespoon
  • For Garnishing:
  • Fresh cream: 1 tablespoon
  • Grated and processed cheese: 4 tablespoon

Method of preparation:

  • Take a pan and heat the butter. Add the thinly chopped onions and sauté for 1-2 minutes on a high flame
  • Add the garlic to the sauté. Sauté for few seconds on a medium flame
  • Add the tomatoes and baked beans. Now cook the mixture for 1-2 minutes on a medium flame and keep stirring continuously.
  • Add the oregano while cooking the mixture on a high flame
  • Now, add 2 ½ cups hot water to the pan mixture along with tomato puree, salt and mix thoroughly. Cook the mixture on a high flame for another 2-3 minutes.
  • Add the pasta to the mixture and the corn flour and water mixture. Cook on a high flame for atleast 2 minutes.
  • Remove from flame and serve hot with grated cheese and fresh cream.
