The American Sweet Corn Salad (6 servings)


  • Boiled sweet corn kernels: 3 cups
  • Finely chopped spring onions: ½ cup
  • Capsicum cubes: ½ cup
  • Tomato cubes: ½ cup
  • To prepare the Vinaigrette Dressing:
  • Vinegar: 1 tablespoon
  • Olive oil: 2 tablespoon
  • Mustard powder: ½ teaspoon
  • Sugar: 1 tablespoon
  • Freshly ground pepper to taste
  • Salt to taste

Method of preparation:

  • In a bowl combine the salad ingredients including the sweet corn, tomatoes, capsicum, spring onion and mix properly.
  • Mix all the items listed under the vinaigrette dressing and pour it in the salad bowl.
  • Toss well and keep the mixture in the refrigerator for at least an hour
  • Garnish with the remaining tomatoes and spring onions.
