Mushroom Curry (4 servings):

Ingredients:

  • 1 lb cleaned and chopped mushrooms
  • 1/4th cup of butter, meat dripplings and olive oil.
  • 1 cup of water or broth
  • ½ cup heavy milk or cream
  • ½ cups of shallots (minced)
  • 3 tbsp of flour
  • Pepper and salt as per the taste.

Method of Preparation:

You need to Sauté the mushroom along with shallot and make the roux. Below are the steps for making mushroom gravy curry:

  • Melt 1 tbsp butter in the skillet over a medium heat. Add the sauté and mushroom until they turn brown. You will need 5-10 minutes of cooking time.
  • Add the shallots, cook them with the mushroom till they become translucent. You need another 5-10 minutes to do this. Watch the mixture while stirring at the same time.
  • As the mushroom and shallot cooks, make the roux. Melt the remaining butter in the skillet. Whisk the flour and allow it to cook for 1 min.
  • Whisk in the broth or water and allow it to simmer for 3 minutes.
  • Whisk in the thick milk or cream and simmer and add seasonings. Simmer for 2 minutes
  • Add the shallot and mushroom mixture to the curry.

  • After whisking the broth, you can add ¼ cup of white wine or sherry.
