Ingredients

  • Chopped Asparagus: 1 cup
  • Oil: 2teaspoon
  • Chopped onions: ½ cup
  • Peeled and chopped potatoes: ½ cup
  • Vegetable stock: 1 ½ cups
  • Low fat milk: ½ cup (97.7% fat free)
  • Salt to taste
  • Black pepper: ½ tsp

Method of preparation:

  • Take a pan and heat the oil. Add the finely chopped onions and sauté for 2 minutes in a medium flame.
  • Add the asparagus, potatoes, and the vegetable stocks and boil it.
  • Cover the lid and cook on the slow flame for around 8-10 minutes till the potato is cooked
  • Now, cool the mixture and blend the pan mixture in the mixer. Use two cups of water to make the puree.
  • Transfer the asparagus puree back to the deep pan (non-stick) and then add salt, milk, black pepper and mix thoroughly. Cook the mixture on a medium flame for 1-2 minutes and keep stirring occasionally.
  • Serve the soup hot with asparagus.
