The apple and lettuce salad with melon dressing (4 servings)

Ingredients:

  • Torn lettuce: ½ cup
  • Shredded cabbage: ½ cup
  • Thickly grated carrot: ¼ cup
  • Red and yellow capsicum cubes: ¼ cup
  • Chopped apples: ½ cup
  • Lemon juice: ½ tsp
  • Bean sprouts: ½ cup
  • Chopped grapes: 2 tablespoon
  • Finely chopped Spring onion greens: 1 tablespoon
  • To be blended together for dressing:
  • Muskmelon purees (‘kharbuja’ puree): ½ cup
  • Roasted and crushed cumin seeds: ½ teaspoon
  • Chopped coriander: 3 tablespoon
  • Freshly ground pepper to taste
  • Salt to taste

Method of preparation:

  • Put the cabbage, carrots, capsicum and lettuce in the icy cold water for at least 30 minutes. This will make the salad material crunchy.
  • Drain the ingredients and wrap in the muslin cloth. Refrigerate the materials for few hours.
  • Now, toss the apples in the lemon juice and keep in the refrigerator.
  • Mix all the ingredients including cabbage, carrots, capsicum, lettuce, apples, grapes, bean sprouts and spring onions together. Mix gently in the bowl by adding salt.
  • Before serving the salad, add the dressing and serve.
