The Chicken Noodle Soup (4 servings- about 1 ½ cups)

Ingredients:

  • Fat free chicken stock or the lower sodium broth of chicken: 8 cups
  • Chicken thigh bones: 4 ounces
  • Bone-in chicken breast: 12 ounces
  • Diagonally Sliced carrots: 2 cups
  • Diagonally sliced celery: 2 cups
  • Chopped onion: 1 cup
  • Egg noodles(medium cooked): 6 ounces
  • Kosher salt: ½ tsp
  • Black pepper: ½ tsp
  • Celery leaves

Method of preparation:

  • Combine the fat free chicken stock and chicken broth, chicken thigh bones and bone-in chicken breast in the Dutch oven and cook on a medium high heat. Bring the oven contents to boil. Now, reduce the heat and simmer for 20 minutes. Remove the chicken from the heat and let it rest for 10 minutes.
  • Separate the chicken from the bones and shred the meat into small pieces. Discard the bones.
  • Now add carrot, onion and celery to the pan containing hot oil. Simmer the mixture for at least 10 minutes.
  • Add noodles and simmer for another 6 minutes.
  • Add the chicken, black pepper and salt to the pan mixture. Cook the entire mixture for 2 minutes and till the time noodles are done.
  • Garnish the soup with celery leaves and serve hot.
