Shahi Rogan Josh is the red coloured meat which was brought to India by the Mughals and which got influenced by the Persian cuisine. The intense heat of the Indian plains took the Mughals to Kashmir and the dish got introduced to the Kashmiris. The staple Kashmiri dish is the main dish of the multi-course meal of Kashmir. Comprising of the chunks of lamb, the dish is cooked in the gravy based on shallots or onion, ginger, garlic, yogurt, and the various aromatic spices. Let us see how to make the easy Shahi Rogan Josh recipe.

Shahi Rogan Josh:

Ingredients:

  • Minced mutton: 250gms
  • Sliced onion: 2 medium sized
  • Garam Masala: 1 tsp
  • Finely chopped green chillies: 4
  • Finely chopped skinned tomatoes: 3
  • Fresh Curd: 1 cup
  • Saffron soaked in lukewarm milk: 1 big pinch
  • Cashew nuts: 15
  • Clarified Butter: 4 tbsp
  • Ginger: 1” long
  • Coriander seeds: 1 tbsp
  • Turmeric: 1 tbsp
  • Red chillies: 6
  • Cumin seeds: 1 tbsp
  • Garlic: 6 cloves

Method of Preparation:

  • First of all grind coriander seeds, ginger, red chillies, turmeric, garlic, cumin seeds with the required amount of salt to thick paste
  • Heat butter in the pan
  • Fry green chillies, onion, tomatoes till they turn brown and the butter begins to separate.
  • Add the grinded masala paste and simmer for at least 3 minutes
  • Add the keema and simmer well
  • Beat the curd and add it along with 1 cup of water
  • Cover the lid and cook till the meat becomes tender and the gravy gets thicker.
  • Add the garam masala, cashewnuts, and the soaked saffron.
  • Cover the lid again
  • Serve the dish hot after garnishing it with coriander leaves.
