Salmon Cucumber Boats

Ingredients:

  • Three of canned pink salmon, (drained).
  • One tablespoon capers.
  • One tablespoon yellow mustard.
  • Two tablespoon plain low-fat yogurt.
  • Dash salt.
  • Dash pepper.
  • One cucumber.
  • Side Salad.
  • 3 or 4 cup romaine lettuce.
  • Two tablespoons chopped macadamia nuts.
  • One clementine.
  • Two tablespoon olive oil.
  • Half tablespoon cider vinegar.
  • Dash salt.
  • Dash pepper.

Method:

  1. Combine all the ingredients. 
  2. Divide cucumber length wise, void out each half, and stuff with salmon mixture. 
  3. Caper add a salty punch with just two calories per tablespoon. 
  4. Serve with some addings.
