Meat Durbari Recipe


  • Onion: 1 big size
  • 1 inch of ginger
  • Coriander leaves: 2 tablespoon
  • Green chillies: 2
  • Clarified butter: 3 tablespoon
  • Garlic: 4 cloves chopped coarsely
  • Wine vinegar: 3 tablespoon
  • Warm water: 175 ml
  • Tomato puree: 1 tablespoon
  • Sesame seeds: 1 tablespoon
  • Leg of lamb: 1 kg
  • Bay leaf: 1
  • Poppy seeds: 2 tablespoon
  • Cinnamon: 2 inches
  • Dried red chilli peppers: 4
  • Cloves: 4
  • Black pepper: 10
  • Brown cardamom: 2

Method of Preparation

  • Trim off the excess fat from the lamb leg and cut it into 2” cubes
  • Prepare the spice paste with sesame seeds, bay leaf, poppy seeds, cinnamon, dried red chillies, cloves, black pepper and cardamom.
  • Rub the spice paste over the meat and leave the meat for marinating. Keep it in refrigerator overnight or at least for 5-6 hours so that the meat absorbs the flavour completely.
  • Add salt to the garlic and crush it to smooth paste
  • Now, melt the clarified butter in the pan over a low flame
  • Add ginger, onion and adjust the flame to a medium level. Fry the onion till soft.
  • Add the grated garlic and fry till 2-3 minutes
  • Now add the meat to the mixture in the pan and cook till the meat is brown
  • Add water and boil the mixture. Cook till the meat is tender
  • Add green chillies, puree, and coriander leaves, vinegar
  • Cook for another 3-4 minutes in a medium flame
  • Turn off the flame and serve hot.
