Lemon Chicken with Gazpacho

Ingredients

  • Three and half of chicken breast
  • One tablespoon olive oil
  • Half lemon, sliced
  • One teaspoon fresh rosemary

Gazpacho

  • One cup stewed tomatoes
  • Three cloves garlic, minced
  • Half cup chopped onion
  • One fourth cup chopped cucumber
  • One fourth cup chopped green pepper
  • One tablespoon white wine vinegar

Directions

Coat chicken with olive oil. Cover with lemon pieces and thyme and boil at 350F for 25 to 30 notes. Combine gazpacho ingredients in a blender, and then serve at room temp with chicken.
