Beetroot Soup (2 servings)


  • Big Beetroot: 1 piece
  • Butter: 1 tablespoon
  • Plain flour or maida: 1 tablespoon
  • Milk: 3/4th cup
  • Salt to taste
  • Freshly ground black pepper: 1/4th tsp
  • Fresh cream: 1 tablespoon

Method of preparation:

  • Add water to the beetroot and pressure cooker the beetroot for at least 4 whistles.
  • Allow the steam in the cooker to escape before opening the lid
  • Peel the boiled beetroot and chop it in bigger cubes
  • Now, combine the chopped beetroot with 3/4th cup of water and blend in the mixer.
  • Strain the mixture and keep aside
  • Now, heat the butter in the non-stick pan and add the flour. Cook the plain flour for 1-2 minutes on a medium flame. Keep stirring the mixture continuously.
  • Add the milk to the pan along with the pureed beetroot mixture. Mix it well and cook for 2-3 minutes on a medium flame. Keep stirring the mixture.
  • Add the freshly ground pepper, salt to taste and fresh cream. Cook the pan mixture for 2-3 minutes and keep on stirring occasionally.
  • Remove from the flame and serve hot.
