Egg Recipes For Lunch  The Mangalorean Egg Curry Recipe

Eggs are one of the most asked-for foods not just because of the delectable taste and aroma but also due to the nutritious composition if possesses. High on protein and low on fat (and that too unsaturated), this tasty delight is easy to cook but hard to master the unlimited recipes it can be used in. Eggs are really good for eyes and also for building muscles. A number of vitamins can be found in it, which are needed for a healthy body. Now, take a look at one of the following egg recipes for lunch.

The Mangalorean Egg Curry (4 servings):


  • Eggs: 5-6 (boiled with slits in it with a knife)
  • Onion: 1 medium-sized
  • Tomato: 1 small chopped finely
  • Potato: 1 large with peeled skin
  • Coconut milk: ½ cup
  • Oil: 3 ½ tbsp.
  • Salt as per taste
  • Carom seeds: a pinch
  • Cinnamon stick: 1 inch
  • Curry leaves: 1 sprig
  • Egg: 2 (beaten)
  • Coriander seeds: 1½ tsp.
  • Cuminseeds: ¼ tsp.
  • Methi seeds: small pinch
  • Mustard seeds: ¼ tsp.
  • Coconut: 4 tbsp. (in grated form)
  • Red dry chilies: 5-6
  • Garlic: 3-4 cloves
  • Onion: 1, large sliced
  • Tamarind: 1 tsp. paste

Method of preparation:

  • Dry roast the methi seeds and mustard seeds for a minute. Add cumin seeds, red chilies and coriander seeds and sauté for 3-4 minutes on a low flame. Then remove from pan and keep it aside.
  • Now take the same pan and add ½ tbsp. of oil to it. Add onions and sauté for 5-7 minutes and let them turn light brown. Add turmeric powder, grated coconut and garlic to it. Sauté it for a few minutes more and then turn the flame off. Let it cool.
  • Coarse grind the roasted spices and add the onion-coconut mixture that you had sautéed previously. Also, add tamarind to it and grind it all into a paste with coconut milk.
  • Heat 2 tbsp. of oil in a wok and add carom seeds to it. Let them splutter. After that, add curry leaves, cinnamon stick and sauté for a minute. Add sliced onions, let them sauté for a few minutes. Then add the paste you ground in the previous step. And stir properly. After that, add tomato slices and mix will. Sauté for 3-4 minutes.
  • Add potatoes and salt to it and sauté for a few minutes. Also, add 3 cups of water to let it boil. Now, add the slit and boiled eggs to it and simmer it for 20 minutes on a reduced flame. Turn off flame after simmering.
  • Now pour it all out in a serving bowl and serve with rice or Indian bread.
