Originally from Hyderabad, the Patther Kabab is made with the marinated muscle meat of the lamb and is cooked over the stone (patther). The black stone comprised of stone of around ½” thickness is heated over the charcoal bed. The meat is cooked on the stone. Let us see the way of making Patther Kabab.

 

PattherKabab Recipe

Ingredients:

  • Lamb muscle meat (Cut as ¾” thickness and 2”x3” length) – 2 pounds
  • Serrano-6
  • Ground Cinnamon – 1tsp
  • Black Pepper (Ground)-1 tsp
  • Chopped ginger- 1 tsp
  • Minced garlic-1 tsp
  • Salt- ½ tsp
  • Skin of raw papaya (finely chopped)-2 tablespoon
  • Ghee- 1 tablespoon
  • For Baking:
  • Oven
  • Ghee
  • Pizza stone

Method of preparation

Marination:

  • Combine all the ingredients in the food processor except lamb. Process the ingredients and make a smooth paste
  • Poke and rub the paste on the lamb pieces. Take the fork and make 10 holes at least on the lamp pieces. Rub the paste again. Let the meat rest for 4 hours at the room temperature.

Baking:

  • Put the pizza stone in the middle of the rack
  • Turn on the oven and preheat at 450 degrees Fahrenheit. Wait till the pizza stones are really hot
  • Take the marinated kabab along with the ghee on both the sides and cook the kebab directly on the stone for 5 minutes.
  • Turn the kebabs a few times and keep basting the kebabs with oil
  • Take the kebab off when cooked.

  • Dice all the lamb meat along with the vegetables in the same consistency
  • Always marinate the meat overnight so that it becomes flavourful.
