Kerala Egg Roast recipe (4 servings):
•Eggs (boiled with slits): 4
•Onions (sliced): 2
•Green chilies (slit): 2
•Ginger-garlic paste: 1 tsp.
•Tomatoes (chopped): 2
•Red chilli powder: ½ tsp.
•Black pepper powder: ½ tsp.
•Coriander powder: 1 tsp.
•Garam masala powder: a pinch
•Curry leaves: 1 sprig
•Salt as per taste
•Oil: 2 tbsp.
Method of preparation:
•Take a wok and heat oil in it. Add the green chilies, sliced onions and sauté for 8 minutes. Also add ginger-garlic paste and sauté for another 5 minutes.
•Add red chili powder, curry leaves, black pepper powder, coriander leaves and salt to it. Mix it properly.
•Add the tomato slices and sauté for another 5 minutes. Add ¼ cups of water with the boiled eggs. Cover it with a lid for 8 minutes.
•After that, remove the lid and add garam masala to it and cook for 3 minutes. Turn off the flame after that. Pour in serving bowl and serve with Indian bread.

•You can also add coconut milk after removing the lid and cook it for a few minutes. This will greatly improve the taste of this recipe.
