Chicken Goat Cheese Quesadillas

Ingredients:

  • Three or four of goat cheese, softened to room temperature.
  • One tablespoon shredded Monterey jack cheese.
  • One fourth tablespoon virgin olive oil.
  • Two tablespoon chopped Vidalia onion.
  • One fourth cup frozen corn kernels(defrost).
  • Pinch ground black pepper.
  • One fourth cup diced cooked skinless white-meat chicken.
  • Half tablespoon chopped fresh cilantro.
  • two six-inch corn tortillas.

Method:

  1. Syndicate cheeses in a small ball, Usual aside.
  2. Heat olive oil in aaverage sauté pan over medium-low warmth.
  3. Add onion and sauté for two records. 
  4. Add corn and sprinkle; sauté for one miniature. Enhance chicken, and cook for one little. 
  5. Take away from hotness, and then stir in cilantro. Gulf cheese mixture, and spread over two tortillas.
  6. Layer each tortilla with half the chicken mixture, and top with lasting tortillas. Sprig a
  7. Largeboiling pan or griddle with cooking spray. 
  8. Warm quesadillas ended medium warmth for five to six minutes, flipping central through.
